Penne with Asparagus, Sage and Peas





Ingredients





1/2lb penne



2 tablespoons extra-virgin olive oil



3 garlic cloves, finely chopped



1lb thick asparagus, cut into 1-inch lengths



2 cups chicken stock



10 ounces shelled English peas or frozen baby peas, thawed



1/4 cup thick cream



2 tablespoons unsalted butter



1 tablespoon minced fresh sage



1/2 cup freshly grated Parmigiano-Reggiano cheese, plus more for serving



Salt and pepper



Cooking instructions





Add the penne to a large pot of salted water and bring to a boil and cook, stirring occasionally, until al dente. Drain. Heat the olive oil in a large skillet. Add garlic and asparagus and cook over low heat, stirring occasionally, until the garlic is fragrant, about 3 minutes. Add stock and boil over high heat until reduced by half and the asparagus are soft. Add peas and cream to skillet and boil over high heat until the sauce has thickened, 3 minutes. Stir in the penne and cook until heated through. Remove from the heat and add the butter, sage and the 1/2 cup of cheese. Salt and pepper to preferred taste. Put pasta in to serving bowls and dish up right away.





Spaghetti with Clams and Green Beans





Ingredients





10 ounces green beans



1/4 cup extra-virgin olive oil



2 cloves of garlic, minced



1/2 teaspoon crushed red pepper



2 large plum tomatoes (1/2 pound), coarsely chopped



Kosher salt and ground pepper



1/2 cup dry white wine



24 littleneck clams (2 pounds) washed



10 large basil leaves, torn



3/4 pound spaghetti



Grated Parmigiano-Reggiano cheese, for serving (optional)



Cooking instructions





Add green beans to a large pot of boiling salted water and cook until soft. Using a slotted spoon, remove beans and leave aside. Bring the water back to a boil. Using a large skillet, heat the olive oil. Add garlic and crushed red pepper and cook over moderate heat until fragrant, about 60 seconds. Add the chopped tomatoes and season with salt and pepper. Cook, stirring occasionally, until the tomatoes start to break, about 5 minutes. Add white wine and clams and bring to a boil. Cover skillet and simmer until the clams open. Remove the skillet from the cooker and add green beans and basil.





Add spaghetti to boiling water and cook until al dente. Drain the spaghetti, keeping 1/4 cup of the cooking water. Return the spaghetti to the pot and add the clam and green bean sauce and the reserved pasta cooking water. Toss over moderate heat until the sauce coats the spaghetti, about. Transfer the spaghetti and clams to shallow bowls and serve.

Add Old Bay seasoning to taste (2 Tbsp is a very spicy amount)

Serve with a side of sauteed onion and bell pepper. Place the onions on one side of the chicken breast and peppers on the other. This will add visual interest to your dish and keep the flavors separated.





A side dish of whole grain pasta and marinara sauce (marinara from a jar is fine) will add a great accoutrement to this dish. Garnish with grated Parmesan cheese.





Served with a hearty red wine this simple meal becomes an elegant offering fit for guests.





Begin the meal with a large salad or raw vegetable platter. This will give you the raw food enzymes that are destroyed when food is heated. Such a diverse offering will give you a wide array of nutrients.

The other day I was looking through my grocer's weekly sale flyer and I found myself thinking, "The easier the preparation, the worse it is for you." Think about fast food. No preparation, but completely unhealthy.





I continued my thoughts through meal preparations - frozen TV dinners, frozen pizza, frozen "meal in a bag", boxed dinners, the list goes on and on. We are so concerned with doing things quickly we are hindering our health by jamming our bodies full of preservatives and things with names too long to state and too difficult to pronounce.





I pictured my grocery store, which wasn't difficult since I'm usually there at least twice a week. I love my grocer's produce section, seeing all the fresh fruits and vegetables; I usually spend most of my time there. However, thinking of all the isles that follow, my thoughts were once again confirmed. Packaged food after packaged food - even in the organic isle! I know that cooking with natural ingredients is the best way to go, but how are we to do it if we're bombarded with packaged, boxed, preserved food?





Thinking about my own cooking, I know that I use more "pre-packaged" items than I probably should. For convenience sake, I often used frozen vegetables and canned tomatoes. I feed my kids boxed macaroni and cheese. However, they don't eat frozen dinners, ready-made frozen chicken, and we never eat at fast food restaurants.





These thoughts drove me to research my own recipes; were there a handful of crock pot recipes with extremely easy preparation that are healthy? I did find a bunch, and although the recipes with canned soups tend to be higher in sodium, I believe I found a nice balance between easy preparation and health. Swap food When shopping always think of a healthier alternative to what you pick up. Instead of potato chips go for low fat crackers or rice cakes. If you want biscuits chose one that contains fruit alternatively make your own (see recipes to follow)





Buying packed or ready made food and snacks usually means it will be less healthy than making your own. I will now provide a few easy recipes to make that are both tasty and good for you





OAT BISCUITS Melt in Microwave - 1 dessert spoon golden syrup1 dessert spoon cold water4oz margarine Stir in 1 teaspoon bicarbonate of soda(It will become frothy)Now add - 1 cup oats1cup SR flour 3/4 cup sugar





Mix together dried and melted ingredients.Roll into balls the size of a teaspoon.Put onto a greased tray and squash balls. Cook 125 degrees 10 - 15 minutes, until light golden brown.





QUICK SMOOTHY RECIPE You will need





2 x bananas





1 tablespoon of honey





2 cups of milk





1 x tablespoon of yoghurt





Method Peel the bananas, break them up into pieces and place them in a large bowl





Take a fork and mash the banana so that it changes from lumpy to soft squidgy and creamy.





Add the honey and yoghurt, mix well with a fork until it's all creamy





Place the milk into the bowl and whisk the mixture with your fork until everything is mixed and pour into glasses.





MUSTARD AND LEMON CHICKEN 4 skinless chicken breasts halved





1.5 tablespoons of Dijon mustard





2 teaspoons of margarine





2 tablespoons of lemon juice





½ teaspoon of tarragon





Method





Preheat oven to 375 degrees. Place chicken in a shallow oven proof dish





In a saucepan, melt the margarine, add the mustard, lemon juice, and tarragon. Stir well and pour over chicken.





Bake in the oven for 30-45 minutes or until cooked

As fruit is decidedly beneficial for all persons with a normal digestion, every opportunity to include it in the diet should be grasped. Some fruit salads are comparatively bland in flavor while others are much more acid, but the mild ones are neither so appetizing nor so beneficial as those which are somewhat tart.

Here are 5 types of simple to prepare healthy fruit salads to start off in a week.

1) Mixed Fruit Salad
The combination of fruits given in the accompanying recipe makes a very good salad, but it need not be adhered to strictly. If one or more of the fruits is not in supply, it may be omitted and some other used. In case canned pineapple is used for the salad, the juice from the fruit may be utilized in making a fruit salad dressing.

1 grapefruit
2 oranges
1 banana
2 apples

Serve on salad plates garnished with lettuce leaves. Place a maraschino cherry on top and this is sufficient to serve for six person.

2) Fruit and Nut Salad

Slice two bananas, two oranges and mix them with one-half cup of English walnuts and the juice of one-half lemon with French dressing. Serve on lettuce leaves.

3) Hungarian Fruit Salad

Mix together equal parts of banana, orange, pineapple, grapefruit and one-half cup of chopped nuts. Marinate with French dressing. Fill apple or orange skins with mixture. Arrange on a bed of watercress or lettuce leaves. Sprinkle with paprika.

4) Russian Fruit Salad

Peel and pit some peaches, cut in slices and add as much sliced pineapple, some apricots, strawberries
and raspberries, put these in a dish. Prepare a syrup of juice of two lemons, two oranges, one cup of water and one pound sugar, a half teaspoon of powdered cinnamon, grated rind of lemon, add one cup red wine and a half glass of rum. Boil this syrup for five minutes, then pour over the fruit, tossing the fruit from time to time until cool. Place on ice and serve cold.

5) Summer Mix Fruit Salad

Any agreeable combination of fruits which may be obtained during the same season will be suitable for summer mix salad. The combination given in the accompanying recipe includes strawberries, pineapple, and cherries. However, pineapple and cherries may be used alone, or strawberries and pineapple may be used without the cherries, or red raspberries may be used to garnish such a salad.

3/4 c. strawberries, cut into halves
3/4 c. pineapple, cut into dice
3/4 c. sweet cherries, seeded
Lettuce
Fruit-salad dressing

Prepare the fruits just before serving. Put them together, place on salad plates garnished with lettuce, and serve with the fruit-salad dressing.
