Is pasta good for you? There are two answers to this question "Yes" and "No.". Like with most foods pasta is no different. So long as the pasta is the best type, cooked right and that no bad foods are eaten with it, then yes it's good.





Things to watch that can ruin a good food being healthy for you.





If food is over cooked losing all its goodness then that food if you like becomes useless. Then there's the matter of pretty foods. Don't fall into the trap that just because something looks nice means it's good for you. Most fancy dressings and toppings are unhealthy and fattening, and something the dieter needs to avoid.





For those watching their weight, although the way a particular food is cooked plays a large role in keeping the goodness there, a lot depends on eating the right food for it to be classed as healthy and not fattening.





If you want to change your diet and eat more healthily, then bear in mind that no matter how much something is promoted as good for you, that is not a guarantee that it is. Too much of a good food can cause considerable harm especially when it's eaten with bad foods.





Pasta





If you ask someone where pasta comes from the likely response is Italy, while this is easily understood with the Italians eating a lot of it, however, according to Greek mythology it gives credit to the Greek God Vulcan for inventing a gadget that made the first spaghetti from strips of dough. But then other study traces pasta's roots back to the Etruscans in 400 BC, where the first Lasagna was thought to be made out of whole grain spelt flour.





Who cares where it came from, the important thing is we have it now, so let us get on and enjoy it.





Is Pasta Healthy Food?





The unhealthy side of pasta would include that it is made with white flour, and swimming in a thick creamy sauce. Whole grain al dente pasta with an unsweetened tomato sauce is by far the healthier option. Whole grain al dente pasta is fabulously high in fiber, vitamins, minerals and essential fatty acids. It is gradually absorbed into the bloodstream and not listed to cause a blood sugar spike.

Healthy recipes





Farfalle with Zucchini and Parsley-Almond Pesto





Ingredients





1lb farfalle



1 garlic clove



1/3 cup unsalted roasted almonds



1 1/2 cups flat-leaf parsley leaves



1/2 cup plus 1 tablespoon extra-virgin olive oil



1/4 cup freshly grated Parmigiano-Reggiano cheese



Kosher salt and freshly ground pepper



1lb zucchini (2 medium), halved lengthwise and sliced crosswise 1/8 inch thick



Crushed red pepper



Cooking instructions





Bring a big pot of salted water to the boil. Add farfalle and cook until it is al dente. Drain the farfalle. In a food blender, pulse the garlic. Add the almonds and pulse until they are coarsely chopped. Add the parsley and 1/2 cup of the olive oil and process until the parsley is finely minced. Add the Parmigiano-Reggiano cheese and pulse just until the pesto is combined. Add salt and pepper and scrape the pesto into a large, shallow serving dish. In a large skillet, heat the remaining 1 tablespoon of olive oil. Add the zucchini and cook over a high heat until soft and browned in spots, about 5 minutes. Add the crushed red pepper and season with salt and pepper. Transfer the zucchini to the bowl with the pesto. Add the farfalle, toss well and serve.





Penne with Asparagus, Sage and Peas





Ingredients





1/2lb penne



2 tablespoons extra-virgin olive oil



3 garlic cloves, finely chopped



1lb thick asparagus, cut into 1-inch lengths



2 cups chicken stock



10 ounces shelled English peas or frozen baby peas, thawed



1/4 cup thick cream



2 tablespoons unsalted butter



1 tablespoon minced fresh sage



1/2 cup freshly grated Parmigiano-Reggiano cheese, plus more for serving



Salt and pepper



Cooking instructions





Add the penne to a large pot of salted water and bring to a boil and cook, stirring occasionally, until al dente. Drain. Heat the olive oil in a large skillet. Add garlic and asparagus and cook over low heat, stirring occasionally, until the garlic is fragrant, about 3 minutes. Add stock and boil over high heat until reduced by half and the asparagus are soft. Add peas and cream to skillet and boil over high heat until the sauce has thickened, 3 minutes. Stir in the penne and cook until heated through. Remove from the heat and add the butter, sage and the 1/2 cup of cheese. Salt and pepper to preferred taste. Put pasta in to serving bowls and dish up right away.





Spaghetti with Clams and Green Beans





Ingredients





10 ounces green beans



1/4 cup extra-virgin olive oil



2 cloves of garlic, minced



1/2 teaspoon crushed red pepper



2 large plum tomatoes (1/2 pound), coarsely chopped



Kosher salt and ground pepper



1/2 cup dry white wine



24 littleneck clams (2 pounds) washed



10 large basil leaves, torn



3/4 pound spaghetti



Grated Parmigiano-Reggiano cheese, for serving (optional)



Cooking instructions





Add green beans to a large pot of boiling salted water and cook until soft. Using a slotted spoon, remove beans and leave aside. Bring the water back to a boil. Using a large skillet, heat the olive oil. Add garlic and crushed red pepper and cook over moderate heat until fragrant, about 60 seconds. Add the chopped tomatoes and season with salt and pepper. Cook, stirring occasionally, until the tomatoes start to break, about 5 minutes. Add white wine and clams and bring to a boil. Cover skillet and simmer until the clams open. Remove the skillet from the cooker and add green beans and basil.





Add spaghetti to boiling water and cook until al dente. Drain the spaghetti, keeping 1/4 cup of the cooking water. Return the spaghetti to the pot and add the clam and green bean sauce and the reserved pasta cooking water. Toss over moderate heat until the sauce coats the spaghetti, about. Transfer the spaghetti and clams to shallow bowls and serve.

Some of the biggest excuses I hear about healthy eating, be it for health reasons, or to lose weight or gain muscle are - "healthy food doesn't taste good," (which is a serious problem because if your food doesn't taste good, it's very unlikely you'll stick to the plan) "it takes too long to prepare healthy food", and, "it's too complicated." These excuses are usually the result of thinking you need to slave over a hot stove preparing 6 course meals all day long. Nothing could be further from the truth.





Excuse #1 Healthy food is bland food





First off, the reality is that healthy foods aren't the one to blame; it's the cook who's at fault. Healthy foods don't have to be boring, or taste bad. Foods like rice cakes taste like cardboard because that's what rice cakes taste like, not because all healthy foods do





The belief that healthy food doesn't taste good will slow down your progress. Healthy food is like high performance race fuel for your body, while junk food laden with salt, sugar, fats, preservatives and the like are nothing more than camouflaged candy. You can say healthy food helps you perform like an Indy car, or a jet fighter, and junk food gives you the performance of a garbage truck! If you insist on eating junk and avoiding healthy food because "it taste's bad," don't expect to win any races or competitions anytime soon.





Another point to keep in mind is the following, expensive restaurants don't serve Big Macs - notice I didn't say burgers. They have burgers alright; one's made with top quality beef, nutritious bread and piles of veggies.





A tasty menu will actually make you look forward to your meals, and that's critical.





You might be able to eat a bad meal every now or then and brush it off, but do you think you could do that every day? How about 4, 5, 6 even 7 times a day? Probably not unless you were in a POW camp and didn't have a choice.





Simply put, tastier food makes it easier to stick to your nutritional plan. Stick to your nutritional plan long enough and it'll become a lifestyle. By making it a lifestyle you'll reap the benefits from eating healthy only gained from "sticking to the plan" for the long haul. Sticking to a healthy lifestyle for the long haul means your results will stick with YOU for the long haul - and I'd bet it's safe to say that's what you want.





Kirsten Hawkins, nutrition and health expert writes: "One of the biggest reasons that people slip off their diets and eating plans is BOREDOM. It's very easy to look at the foods allowed on your diet and see it as restrictive and boring. Chicken four nights a week. Fish three times a week. Green leafy vegetables till they're coming out of your ears. Who wouldn't get bored? The answer is - anyone with a good set of cookbooks and a healthy imagination. Perk up your cabinet with spices and fill your refrigerator with fresh fruits and vegetables, then look for novel ways to combine them."





Excuse #2 I don't have the time to prepare healthy food





You may be saying to yourself "that's great but I don't have the time to cook." The truth is neither do I, at least not 5 or 6 times a day. However, I do have time to cook once a day and will usually prepare multiple meals at a time.





Once you realize that most healthy foods don't take much longer than unhealthy foods you'll find you'll have time for it too.





Most times it's just as fast and even quicker. Usually you can take the same recipes and replace the ingredients with healthier choices. For example, swap medium ground beef for extra lean, butter with olive oil, brown rice for white, and presto, you have a healthy meal. It also helps to experiment with different types of foods and try things you are unfamiliar with.





Excuse #3 Too complicated





It's also not that complicated. You don't need to spend hours seasoning and boiling down dishes. The great thing is that healthy meals tend to be simple dishes that use easy to learn cooking methods.





Toni Tanner Scott, Personal Chef and Cooking Coach, writes, "To support your healthy eating plan, stock your pantry wisely, focusing on the kinds of cuisine you and your family prefer. Start with the basics: good olive oil, reduced fat/sodium broth, brown rice, whole wheat pasta, dry beans and lentils. Then if you particularly enjoy Tex-Mex, add good chili powder, cumin, and oregano and tomato paste. If Asian fare is always favorite, keep low sodium soy sauce, ginger and sesame oil on hand, along with longer grain rice... you'll always be able to whip up a fabulous meal with some fresh lean meat and vegetables."





All of this healthy good eating will cause you to feel and look better, which will make you want to stick to the plan even more. Also, consistently eating healthy and balanced meals that meet your caloric requirement will provide you the fuel you need to push yourself to higher levels and maximize the returns from each workout. You will also recuperate better and quicker from your workouts which means you'll be in the gym sooner and reaching your goals faster.

Eating Time!





Learn the basics of cooking.





You really don't need more than the basics, and they are very quick and easy to pick up.





Use the best ingredients you can get





Use fresh ingredients when you cook it'll make your foods taste much better. Even the best chef in the world would be hard pressed to make a tasty meal with old, wilted and stale ingredients.





Stay away from wilted fruits and veggies, and make sure the colors are bright and/or clear.





While fresh organic whole foods are my first choice, using pre cut or pre mixed fruits and veggies, like a salad mix, is OK when you're short on time.





As a rule of thumb, don't use anything that has a strong odor or has a cloudy color.





Fresh fish doesn't have a strong "fishy smell". If it does, it's more than likely going, if not already, bad. Same goes for other meats, stay away from strong odors.





Leftovers with a purpose





Cooking in bulk, i.e. making leftovers on purpose is a great way to keep the fridge or freezer stocked with ready to eat foods and meals.

Being on a diet plan may be fairly challenging. It can even get harder if you are following a diet that isn't producing results (like a starvation diet). I'll talk about which type of diet is easy to stick to and guaranteed effective a little later; but first, I wanted to share with you some easy diet tips. 1. Have your house stocked with tons of healthy food! Is there any other way that would be more effective in helping you eat healthier right from the beginning? Only keep healthy foods stocked, and you'll be more willing to eat those foods. And not just because you run the risk of starving yourself, but because the more you eat healthy foods, the more you train your brain to crave those foods. Have faith... it works! I'm even craving some healthy fruit as I'm writing this article!





2. Make sure that you keep photos of good healthy food around your house! This is just a little tip that will help you each day to remember the value of eating healthy will have on your life. Every day that you view those pictures of healthy fruits and vegetables, you will just naturally begin to feel healthier.





3. Switch up cooking styles and recipes! No matter how resilient you are, there comes a point where if you just have even one more piece of chicken, you will go out of your mind! LOL! I cannot stress enough the importance of switching up your cooking styles and recipes with healthy foods. If you continue to cook the same recipes and eat them over and over, you will get sick of them and go back to your old eating habits. Try cooking your food in different ways with different types of sauces.





4. Discover the truths behind your favorite bad foods! The best way to actually scare you completely from consuming bad foods is to actually find out what they are doing to you. An example of this would be hamburgers from a popular restaurant which total over 1,000 calories... and I had French fries, a side salad with lots of dressing, condiments, a sugary soda, and dessert! Just that one meal is enough calories for an entire day... at Least If You Were a 1st class athlete who exercises and burns a ton of calories! But besides the calories, the amount of fat, carbs, sodium, and other nasty stuff is just simply mind-boggling!





Bottom line, those 4 easy diet tips helped me with overcoming my cravings with eating bad foods, and I'm sure that if you apply them to your life, they will help you as well!





Now, what should be done to actually going on a good diet? If you choose to follow a diet plan that is pretty simple to follow, and in addition is very effective, then you will automatically see yourself losing weight consistently... without feeling those negative emotions most people get when going on a diet. Diets like this are one's that won't have you starve yourself, and instead they have you eat REAL foods, and they carry out the one thing most diet programs out here manage to ignore... and that would be INCREASING your metabolism as opposed to doing unhealthy things to lower it.

Quick Cheap and Healthy Dog Food Recipes

If you feed your dogs manufactured dog food do you really know what you are feeding them? I recently came across a class action lawsuit that been filed against various pet food manufacturers, having read the details and done further research I decided that I couldn't safely feed my dogs any manufactured food so I needed to research some healthy homemade dog food recipes. The priorities when looking for good recipes was to ensure that the food would be healthy, it would be quick to prepare and it would be cheap.





My first stop was my local butcher who I use every week. I explained to him that I was going to make my own dog food and asked him what he could supply that was cheap. He now happily provides me with a large bag of off cuts and meat that would soon be out of date every Saturday evening. I you don't have a local butcher speak to the local supermarket and see what they can provide you with. You'll often find that they drastically reduce prices on meat that will soon go out of date.





After sourcing the meat I then managed to source a supple of cheap vegetables from the local farmers market. Many farmers use to throw away misshaped or bruised vegetables at the end of the market, not anymore! The final ingredient I sourced was large catering packs of brown rice. The rice is very nutritious and helps to bind the food together.





Now that I have assembled all the ingredients it's time to prepare the food. A really quick and simple recipe is to take 2 cups of cooked rice, 1 cup of meat which can be raw or cooked and a cup of grated vegetables, carrots and cabbage are good but try to avoid onions. Mix all these together with a small bit of lard or vegetable oil and feed to your dogs. I can guarantee that after only a few weeks on a menu like this your dogs will be fitter and healthier than before.





There are a few things you need to be aware of before you start to change your dog's diet. Firstly their digestive systems aren't as advanced as human ones so you'll need to change their food gradually over a few days. Start by adding a small amount of your homemade dog food to your dog's meal mixing it with the normal food. Over a period of three to four days gradually increase the amount of homemade food and reduce the manufactured food. Always ensure that you keep plenty of fresh water available for your dog to drink with his meals. Small dogs need only to be fed once a day while larger dogs should be fed twice.





By choosing simple homemade dog food recipes it is possible to extend your dog's life span significantly and to save money. Why not try it for a month and see the improvement in your best friend.

Boneless Skinless Chicken Breast Recipes - Two Quick, Easy, and Healthy Recipes

Boneless skinless chicken breast recipes are easy to make, quick to get to table, and good for you. The most common way to prepare them involves oven cooking to reduce fat content that frying may not offer.





However, if small amounts of olive oil are used for frying many recipes can be developed which are faster than oven baking and just as nutritious. One such recipe is Chesapeake Chicken.





Chesapeake Chicken





Chicken breasts


1 Tbsp. olive oil


1 Tbsp. butter


1 to 2 Tbsp.Old Bay seasoning


3/4 cup Low fat whipping cream





Fry chicken breasts in olive oil and butter until almost cooked (15-25 minutes)


Add Old Bay seasoning to taste (2 Tbsp is a very spicy amount)


Add low fat whipping cream


Simmer until thickened, stirring occasionally





Oven Baked Chicken Breast





This low fat meat should be a vital component of any healthy diet plan. It is a relatively inexpensive source of quality protein.





As tasty as this is you have to remember that you don't need as much protein as Americans usually eat every day. Your daily protein requirement is a piece of meat approximately the size of a pack of playing cards. Keeping that visual in mind will help you determine proper portion size.





Oven Baked Chicken Breast With Onions And Bell Pepper





Chicken Breasts


2 medium onions, sliced


2 bell peppers, cut into rings then halve rings


3 Tbsp. olive oil


2 Tbsp. butter


Sea salt to taste





Coat the chicken breasts with 1 Tbsp. of olive oil and place into baking pan


Sprinkle chicken breasts with sea salt


Bake chicken uncovered in 350 degree preheated oven for 45 minutes


Place onions in a skillet with 1 Tbsp. of butter and 1 Tbsp. olive oil then sauté until translucent


Place bell pepper in a separate skillet with 1 Tbsp. of butter and and 1 Tbsp. olive oil then sauté until slightly browned





Serve with a side of sauteed onion and bell pepper. Place the onions on one side of the chicken breast and peppers on the other. This will add visual interest to your dish and keep the flavors separated.





A side dish of whole grain pasta and marinara sauce (marinara from a jar is fine) will add a great accoutrement to this dish. Garnish with grated Parmesan cheese.





Served with a hearty red wine this simple meal becomes an elegant offering fit for guests.





Begin the meal with a large salad or raw vegetable platter. This will give you the raw food enzymes that are destroyed when food is heated. Such a diverse offering will give you a wide array of nutrients.





The sea salt adds minerals to your foods. Olive oil is very "body friendly" and is always a welcome addition to any dish. Butter offers wonderful flavor and "anti-stiffness" factors. Red wine offers anti-oxidants and is therefore part of a heart smart diet.





Now you have two great boneless skinless chicken breast recipes you can eat knowing they are offering you vital nutrients to make you healthier. Great taste, when combined with "body friendly" versions of your favorite recipes will allow you to eat healthy and not feel the least bit deprived.

Healthy, Tasty, Quick Recipes

Spicy Tomato Soup
Preparation Time: 10 minutes
Cook Time: 40 minutes

Ingredients:
• 4 pounds of ripe tomatoes, try mixing different types of tomatoes
• 3 tablespoons canola oil
• ½ teaspoon paprika seeds
• 1 teaspoon garam masala
• ½ teaspoon cracked black pepper
• 3 cloves minced garlic
• 1 tablespoon fresh minced ginger
• 1 serrano chile, seeded, deveined and chopped
• ½ teaspoon sea salt
• 1 teaspoon brown sugar
• 2 teaspoons tomato paste
• 1 ¼ cups reduced-fat coconut milk

Directions:

1. Wash and cut tomatoes into chunks

2. Heat oil in a large saucepan over medium heat. Add the paprika through chile and cook until spices are fragrant, about 3 minutes

3. Add tomatoes and simmer for 30 minutes, occasionally mashing tomatoes with a potato masher until completely mashed.

4. Add salt, sugar, tomato past and coconut milk and simmer for 5 minutes..

Tomatoes are full of antioxidants, which are good for cells and help promote health. The antioxidant lycopene helps reduce the risk of developing heart disease and boost the body's ability to protect against ultra violet rays. Tomatoes also contain loads of vitamins including Vitamin C, and 44 percent of your daily value of Vitamin A. Usually it is good to eat fresh, raw vegetables because cooking releases some of the nutrients. But tomatoes are opposite cooked tomatoes deliver more antioxidants than raw.

Healthy Vegetable Quiche Recipe

Ingredients
• 2 frozen pie crusts
• 7 eggs
• 1/2 teaspoon sea salt
• 3/4 cup skim milk
• 5 ounces chopped spinach
• 1 cup fresh broccoli
• 6 stalks fresh asparagus
• 1/2 onion
• 1/2 cup low fat cottage cheese
• 1/2 cup pepper jack cheese (change to taste)

Directions:

1. Preheat the oven to 350 degrees.

2. Crack eggs into a large mixing bowl and add the milk, then blend with mixer, or beat with a whisk or fork for several minutes until well blended and uniform. You are going to want to whisk it until it is well blended because the more you do the fluffier it will be when you cook it.

3. Take the frozen chopped spinach and the fresh broccoli and cut them finely or I like to run them through a food processor until minced and then put into the bowl with the egg mixture.

4. Thinly slice the asparagus.

5. Add asparagus, minced onions, pepper jack cheese and salt into the mixture and stir well and pour half of the mixture into each pie crust.

6. Bake the quiches in the oven for 40 minutes until center is solid.

7. 1/8 is a serving but I like to have 2 maybe 3 depending on how hungry I am.

This dish is a great way to start your day with plenty of vitamins and minerals, protein and some fiber.

How to Make Quick and Easy Side Dishes That Are Healthy and Tasty

Side dishes can make or break the meal. Even a quick meal needs good side dishes. Here are some recipes for sides that are quick, easy, and healthy. The Veggie Stuffed Mushrooms are stuffed with broccoli,carrot, onion and cheese. The recipe for Gourmet Artichokes and Spinach also has directions for preparing this dish to be used as an appetizer instead of a side dish.

VEGGIE STUFFED MUSHROOMS

20 large mushrooms (1 1/2 to 2-inches in diameter)
1/2 cup finely chopped broccoli
1/4 cup finely chopped carrot
1 tbsp finely chopped onion
1 cup seasoned salad croutons, finely crushed down to 1/2 cup
1/2 cup shredded cheddar cheese
1/8 tsp salt
2 tbsp butter, melted

Preheat oven to 400 degrees. Cut thin slice from stem end of each mushroom; discard. Remove mushroom stems and chop enough to make 1/4 cup. (Save remaining stems for soups, etc) Place mushroom caps, rounded side down, in a baking dish. Place chopped stems, broccoli, carrot, and onion in a small bowl. Add the crushed croutons, cheese and salt to the vegetables in the bowl. Add butter to the bowl and mix well. Spoon the vegetable mixture evenly into the mushroom caps. Bake 15 to 20 minutes or until the tops are lightly browned. Serve warm.

GOURMET ARTICHOKES AND SPINACH

1 cup sour cream
1 tbsp cheesy Italian dry salad dressing mix
2 pkg (10-oz each) frozen chopped spinach
1 jar (6 to 8-oz) marinated artichoke hearts
1/2 cup cherry tomatoes

Combine the sour cream and the dry salad dressing mix; set aside.

Place frozen spinach in a 1 1/2 to 2-quart casserole dish, cover and microwave 6 minutes until thawed. Fold the undrained artichoke hearts into the spinach along with the sour cream mixture. Replace the cover. Continue to microwave another 8 minutes. Remove from the microwave and stir the mixture. Top with 1/2 cup cherry tomatoes that have been halved. Cook another minute or two.

Note: To serve as an appetizer, omit the tomatoes. Cover the top with sharp cheddar cheese instead of the tomatoes. Serve with an assortment of whole-wheat crispy crackers or bread sticks.

Ingredients
1lb farfalle
1 garlic clove
1/3 cup unsalted roasted almonds
1 1/2 cups flat-leaf parsley leaves
1/2 cup plus 1 tablespoon extra-virgin olive oil
1/4 cup freshly grated Parmigiano-Reggiano cheese
Kosher salt and freshly ground pepper
1lb zucchini (2 medium), halved lengthwise and sliced crosswise 1/8 inch thick
Crushed red pepper
Cooking instructions

Bring a big pot of salted water to the boil. Add farfalle and cook until it is al dente. Drain the farfalle. In a food blender, pulse the garlic. Add the almonds and pulse until they are coarsely chopped. Add the parsley and 1/2 cup of the olive oil and process until the parsley is finely minced. Add the Parmigiano-Reggiano cheese and pulse just until the pesto is combined. Add salt and pepper and scrape the pesto into a large, shallow serving dish. In a large skillet, heat the remaining 1 tablespoon of olive oil. Add the zucchini and cook over a high heat until soft and browned in spots, about 5 minutes. Add the crushed red pepper and season with salt and pepper. Transfer the zucchini to the bowl with the pesto. Add the farfalle, toss well and serve.

Penne with Asparagus, Sage and Peas

Ingredients
1/2lb penne
2 tablespoons extra-virgin olive oil
3 garlic cloves, finely chopped
1lb thick asparagus, cut into 1-inch lengths
2 cups chicken stock
10 ounces shelled English peas or frozen baby peas, thawed
1/4 cup thick cream
2 tablespoons unsalted butter
1 tablespoon minced fresh sage
1/2 cup freshly grated Parmigiano-Reggiano cheese, plus more for serving
Salt and pepper
Cooking instructions

Add the penne to a large pot of salted water and bring to a boil and cook, stirring occasionally, until al dente. Drain. Heat the olive oil in a large skillet. Add garlic and asparagus and cook over low heat, stirring occasionally, until the garlic is fragrant, about 3 minutes. Add stock and boil over high heat until reduced by half and the asparagus are soft. Add peas and cream to skillet and boil over high heat until the sauce has thickened, 3 minutes. Stir in the penne and cook until heated through. Remove from the heat and add the butter, sage and the 1/2 cup of cheese. Salt and pepper to preferred taste. Put pasta in to serving bowls and dish up right away.

Spaghetti with Clams and Green Beans

Ingredients
10 ounces green beans
1/4 cup extra-virgin olive oil
2 cloves of garlic, minced
1/2 teaspoon crushed red pepper
2 large plum tomatoes (1/2 pound), coarsely chopped
Kosher salt and ground pepper
1/2 cup dry white wine
24 littleneck clams (2 pounds) washed
10 large basil leaves, torn
3/4 pound spaghetti
Grated Parmigiano-Reggiano cheese, for serving (optional)
Cooking instructions

Add green beans to a large pot of boiling salted water and cook until soft. Using a slotted spoon, remove beans and leave aside. Bring the water back to a boil. Using a large skillet, heat the olive oil. Add garlic and crushed red pepper and cook over moderate heat until fragrant, about 60 seconds. Add the chopped tomatoes and season with salt and pepper. Cook, stirring occasionally, until the tomatoes start to break, about 5 minutes. Add white wine and clams and bring to a boil. Cover skillet and simmer until the clams open. Remove the skillet from the cooker and add green beans and basil.

Add spaghetti to boiling water and cook until al dente. Drain the spaghetti, keeping 1/4 cup of the cooking water. Return the spaghetti to the pot and add the clam and green bean sauce and the reserved pasta cooking water. Toss over moderate heat until the sauce coats the spaghetti, about. Transfer the spaghetti and clams to shallow bowls and serve.
