Los Angeles is somewhat of a mecca for healthy and delicious food options. However, as someone who admittedly views breakfast burritos as its separate food group, I can be a hard sell when it comes to getting me to choose healthy food options over my beloved greasy diet staples. As a USC student, we have a seemingly endless supply of delicious meal options from Carls Jr., to California Pizza Kitchen, to Wahoo's Fish Tacos, to Panda Express. I had gotten into the habit of settling for an admittedly unhealthy diet on a daily basis when Lemonade came into the picture and changed everything.





Lemonade Diet





Lemonade is a self proclaimed "modern cafeteria serving Southern California comfort food." Lemonade is unlike any dining experience I have ever encountered before. The menu items are colorful and imaginative and the atmosphere is warm and inviting. Lemonade features a number of different menu options. One option is to get "portions." Lemonade portions are cold dishes that consist of a variety of vegetables, noodles, lentils, fruits, and sometimes meats such as chicken or ahi tuna. My favorite recent portion dishes include orecchiette with tomato, perlini mozzarella and red pepper, spaghetti squash with farro and pomegranate vinaigrette, Watermelon radish with ahi tuna, snap peas, black sesame and ginger, Israeli couscous with wild mushrooms, parmesan and lemon truffle, and finally, cauliower with golden raisins, almonds and curry. I have never had a bad experience with the employees, who are friendly and are willing to oblige your sample requests. I like to order multiple portions and stockpile them in my refrigerator. They come packaged in a convenient to-go box, and are great to eat at any time of the day. I sincerely could live solely off of Lemonade portions.





Lemonade also has a variety of Land & Sea item options such as citrus poached salmon let and the buttermilk chicken breast. All of these options are delicious and complement the portions very well. I highly recommend the salmon. In addition to these options, Lemonade also features a number of delicious sandwiches, braises, and salads. There are also a wide range of delicious homemade dessert options. And of course, Lemonade is famous for its namesake lemonade products, which come in a range of delicious flavors. I personally recommend the blueberry mint lemonade. It is delicious and you simply cannot go wrong with it. Lemonade Diet

Ingredients





1lb farfalle



1 garlic clove



1/3 cup unsalted roasted almonds



1 1/2 cups flat-leaf parsley leaves



1/2 cup plus 1 tablespoon extra-virgin olive oil



1/4 cup freshly grated Parmigiano-Reggiano cheese



Kosher salt and freshly ground pepper



1lb zucchini (2 medium), halved lengthwise and sliced crosswise 1/8 inch thick



Crushed red pepper



Cooking instructions





Bring a big pot of salted water to the boil. Add farfalle and cook until it is al dente. Drain the farfalle. In a food blender, pulse the garlic. Add the almonds and pulse until they are coarsely chopped. Add the parsley and 1/2 cup of the olive oil and process until the parsley is finely minced. Add the Parmigiano-Reggiano cheese and pulse just until the pesto is combined. Add salt and pepper and scrape the pesto into a large, shallow serving dish. In a large skillet, heat the remaining 1 tablespoon of olive oil. Add the zucchini and cook over a high heat until soft and browned in spots, about 5 minutes. Add the crushed red pepper and season with salt and pepper. Transfer the zucchini to the bowl with the pesto. Add the farfalle, toss well and serve.





Penne with Asparagus, Sage and Peas





Ingredients





1/2lb penne



2 tablespoons extra-virgin olive oil



3 garlic cloves, finely chopped



1lb thick asparagus, cut into 1-inch lengths



2 cups chicken stock



10 ounces shelled English peas or frozen baby peas, thawed



1/4 cup thick cream



2 tablespoons unsalted butter



1 tablespoon minced fresh sage



1/2 cup freshly grated Parmigiano-Reggiano cheese, plus more for serving



Salt and pepper



Cooking instructions





Add the penne to a large pot of salted water and bring to a boil and cook, stirring occasionally, until al dente. Drain. Heat the olive oil in a large skillet. Add garlic and asparagus and cook over low heat, stirring occasionally, until the garlic is fragrant, about 3 minutes. Add stock and boil over high heat until reduced by half and the asparagus are soft. Add peas and cream to skillet and boil over high heat until the sauce has thickened, 3 minutes. Stir in the penne and cook until heated through. Remove from the heat and add the butter, sage and the 1/2 cup of cheese. Salt and pepper to preferred taste. Put pasta in to serving bowls and dish up right away.





Spaghetti with Clams and Green Beans





Ingredients





10 ounces green beans



1/4 cup extra-virgin olive oil



2 cloves of garlic, minced



1/2 teaspoon crushed red pepper



2 large plum tomatoes (1/2 pound), coarsely chopped



Kosher salt and ground pepper



1/2 cup dry white wine



24 littleneck clams (2 pounds) washed



10 large basil leaves, torn



3/4 pound spaghetti



Grated Parmigiano-Reggiano cheese, for serving (optional)



Cooking instructions





Add green beans to a large pot of boiling salted water and cook until soft. Using a slotted spoon, remove beans and leave aside. Bring the water back to a boil. Using a large skillet, heat the olive oil. Add garlic and crushed red pepper and cook over moderate heat until fragrant, about 60 seconds. Add the chopped tomatoes and season with salt and pepper. Cook, stirring occasionally, until the tomatoes start to break, about 5 minutes. Add white wine and clams and bring to a boil. Cover skillet and simmer until the clams open. Remove the skillet from the cooker and add green beans and basil.





Add spaghetti to boiling water and cook until al dente. Drain the spaghetti, keeping 1/4 cup of the cooking water. Return the spaghetti to the pot and add the clam and green bean sauce and the reserved pasta cooking water. Toss over moderate heat until the sauce coats the spaghetti, about. Transfer the spaghetti and clams to shallow bowls and serve.

For the sake of this reading let's define diets as a way of keeping a good general health, a way of eating whatever it is you want and a way to improve your lifestyle and ultimately your overall state of mind.





Here are a few simple rules:





1. First and foremost, moderation and self discipline are key to anything in life. Whether you're ready to accept this or not, you have to. It is the only way you will have a good, happy, and healthy life.





2. Don't go cold turkey on everything. What i am about to propose to you is a way in which all you have to do is carefully plan your meals. So basically eating what you like and when you like.





3. Eat fresh fruits or in this case fresh home-made fruit products like natural juices, tea, preserves, jam, etc.





Follow these few simple rules and you'll be set for life! Now, onto the main course. The diet i keep telling you about is a fruit based diet. It is actually more of a way of life rather then a diet. Fruits are important to us. They're also astonishing in ways that we don't actually think of at first. They're easy to eat and/or cook, they're healthy for us in almost any way, and more importantly they will provide you with 70% of your daily dosage of nutrients and minerals (in some cases even more then that).





So remember, eat fruits, fresh fruits, and you'll be able to not say no to your favorite foods as well as stay healthy.

Some of the biggest excuses I hear about healthy eating, be it for health reasons, or to lose weight or gain muscle are - "healthy food doesn't taste good," (which is a serious problem because if your food doesn't taste good, it's very unlikely you'll stick to the plan) "it takes too long to prepare healthy food", and, "it's too complicated." These excuses are usually the result of thinking you need to slave over a hot stove preparing 6 course meals all day long. Nothing could be further from the truth.





Excuse #1 Healthy food is bland food





First off, the reality is that healthy foods aren't the one to blame; it's the cook who's at fault. Healthy foods don't have to be boring, or taste bad. Foods like rice cakes taste like cardboard because that's what rice cakes taste like, not because all healthy foods do





The belief that healthy food doesn't taste good will slow down your progress. Healthy food is like high performance race fuel for your body, while junk food laden with salt, sugar, fats, preservatives and the like are nothing more than camouflaged candy. You can say healthy food helps you perform like an Indy car, or a jet fighter, and junk food gives you the performance of a garbage truck! If you insist on eating junk and avoiding healthy food because "it taste's bad," don't expect to win any races or competitions anytime soon.





Another point to keep in mind is the following, expensive restaurants don't serve Big Macs - notice I didn't say burgers. They have burgers alright; one's made with top quality beef, nutritious bread and piles of veggies.





A tasty menu will actually make you look forward to your meals, and that's critical.





You might be able to eat a bad meal every now or then and brush it off, but do you think you could do that every day? How about 4, 5, 6 even 7 times a day? Probably not unless you were in a POW camp and didn't have a choice.





Simply put, tastier food makes it easier to stick to your nutritional plan. Stick to your nutritional plan long enough and it'll become a lifestyle. By making it a lifestyle you'll reap the benefits from eating healthy only gained from "sticking to the plan" for the long haul. Sticking to a healthy lifestyle for the long haul means your results will stick with YOU for the long haul - and I'd bet it's safe to say that's what you want.





Kirsten Hawkins, nutrition and health expert writes: "One of the biggest reasons that people slip off their diets and eating plans is BOREDOM. It's very easy to look at the foods allowed on your diet and see it as restrictive and boring. Chicken four nights a week. Fish three times a week. Green leafy vegetables till they're coming out of your ears. Who wouldn't get bored? The answer is - anyone with a good set of cookbooks and a healthy imagination. Perk up your cabinet with spices and fill your refrigerator with fresh fruits and vegetables, then look for novel ways to combine them."





Excuse #2 I don't have the time to prepare healthy food





You may be saying to yourself "that's great but I don't have the time to cook." The truth is neither do I, at least not 5 or 6 times a day. However, I do have time to cook once a day and will usually prepare multiple meals at a time.





Once you realize that most healthy foods don't take much longer than unhealthy foods you'll find you'll have time for it too.





Most times it's just as fast and even quicker. Usually you can take the same recipes and replace the ingredients with healthier choices. For example, swap medium ground beef for extra lean, butter with olive oil, brown rice for white, and presto, you have a healthy meal. It also helps to experiment with different types of foods and try things you are unfamiliar with.





Excuse #3 Too complicated





It's also not that complicated. You don't need to spend hours seasoning and boiling down dishes. The great thing is that healthy meals tend to be simple dishes that use easy to learn cooking methods.





Toni Tanner Scott, Personal Chef and Cooking Coach, writes, "To support your healthy eating plan, stock your pantry wisely, focusing on the kinds of cuisine you and your family prefer. Start with the basics: good olive oil, reduced fat/sodium broth, brown rice, whole wheat pasta, dry beans and lentils. Then if you particularly enjoy Tex-Mex, add good chili powder, cumin, and oregano and tomato paste. If Asian fare is always favorite, keep low sodium soy sauce, ginger and sesame oil on hand, along with longer grain rice... you'll always be able to whip up a fabulous meal with some fresh lean meat and vegetables."





All of this healthy good eating will cause you to feel and look better, which will make you want to stick to the plan even more. Also, consistently eating healthy and balanced meals that meet your caloric requirement will provide you the fuel you need to push yourself to higher levels and maximize the returns from each workout. You will also recuperate better and quicker from your workouts which means you'll be in the gym sooner and reaching your goals faster.

You really don't need more than the basics, and they are very quick and easy to pick up.





Use the best ingredients you can get





Use fresh ingredients when you cook it'll make your foods taste much better. Even the best chef in the world would be hard pressed to make a tasty meal with old, wilted and stale ingredients.





Stay away from wilted fruits and veggies, and make sure the colors are bright and/or clear.





While fresh organic whole foods are my first choice, using pre cut or pre mixed fruits and veggies, like a salad mix, is OK when you're short on time.





As a rule of thumb, don't use anything that has a strong odor or has a cloudy color.





Fresh fish doesn't have a strong "fishy smell". If it does, it's more than likely going, if not already, bad. Same goes for other meats, stay away from strong odors.





Leftovers with a purpose





Cooking in bulk, i.e. making leftovers on purpose is a great way to keep the fridge or freezer stocked with ready to eat foods and meals.

Bear them in mind when making low-fat dishes such as pasta, soup, casserole and chicken dishes. Try to avoid adding cooking sauces to your meals or gravy as this will pile the calories on.





4. Eat A Healthy Cooked Breakfast





You should avoid fried food, but you can still prepare a healthy and nutritious cooked breakfast. Have strimmed and grilled Canadian bacon, mushrooms, tomatoes, baked beans, poached eggs and whole grain toast with a low-fat spread. Get in the habit of grilling and steaming your food in order to cut down on the saturated fat and keep the nutrition in your food.





5. Practice Portion Control





Whatever you choose to eat, then make sure you enjoy it in moderation. If you are going to eat something a little more fatty as a treat, then just be sensible. If you are having some pizza, instead of eating a whole one, enjoy a slice with a nice green salad. learn to substitute your fries for a salad or baked potato.
